Seed Oils: What They Are, Why They're in Everything, and What to Use Instead

I started paying attention to seed oils a few years ago and I genuinely couldn't believe how many things they were hiding in. Once you start reading ingredient labels, you can't stop.

Here's what I've learned โ€” without the chemistry lecture.

What they actually are

Seed oils are oils pressed from the seeds of plants โ€” not the fruit or flesh, just the seed. The ones you'll find in almost everything: canola oil, soybean oil, corn oil, sunflower oil, safflower oil, cottonseed oil, grapeseed oil, rice bran oil.

These are different from oils like olive oil (pressed from the olive fruit), coconut oil, or butter and ghee. Seed oils require serious industrial processing โ€” high heat, chemical solvents, deodorization โ€” to become the clear, neutral oils you see on shelves.

Quick label tip: if an ingredient list says "vegetable oil," it's almost always soybean oil or a seed oil blend.

Why they ended up in everything

Starting in the mid-20th century, seed oils became the dominant cooking fat in the American food supply because they're cheap to produce, have a long shelf life, and were marketed as heart-healthy alternatives to saturated fat. That last claim has been significantly walked back in research over the past two decades. But the infrastructure is built around them.

The omega-6 imbalance

Seed oils are extremely high in omega-6 polyunsaturated fatty acids. Omega-6 isn't inherently bad โ€” but it exists in a ratio with omega-3 that matters for inflammation. Historically, the ratio in the human diet was roughly 1:1 to 4:1. The modern American diet sits closer to 20:1.

When omega-6 intake is chronically elevated relative to omega-3, research associates it with increased systemic inflammation โ€” the thread that runs through cardiovascular disease, metabolic dysfunction, joint pain, and a lot of the chronic symptoms that brought me to paying attention to food quality in the first place.

The heat problem

Polyunsaturated fats are chemically unstable at high heat. When seed oils are heated they oxidize. Oxidized fats produce compounds research has associated with cellular damage. Oils high in saturated fat (butter, coconut oil, ghee) and monounsaturated fat (olive oil, avocado oil) are significantly more heat stable.

What I cook with instead

The goal isn't perfection. Seed oils are everywhere and complete avoidance isn't realistic. But reducing daily exposure โ€” especially at home where you control the cooking fat โ€” is one of the most straightforward food quality changes you can make.
